Weekly Menu 12/9–12/13

It’s that time of year…. time to cook like crazy.  The weather is chilly, the house is decorated, people are coming and going.  The best thing to do is put your kitchen to work with some meals to cozy up to.

Monday – Boursin Mac and Cheese with Chopped Kale (I’m making this one up as I go.  I’ll post the recipe if it comes out OK.)

Weekly Menu 11/18–11/22

This week, I found lots of inspiration on Pinterest.  There are so many talented cooks out there and so many creative recipes.  Several inspired me and with some tweaks, I will be giving them a try this week.

Monday – Pumpkin Alfredo with Bacon (I don’t really like Mac n Cheese so I’m making an Alfredo sauce with pumpkin, but this photo inspired me.  I’ll post my recipe after it is family approved!)

Happy Veterans Day and thank you to all who have served!

It is cooling down in the Carolinas!  The high is 45 this week.  Eeeek!  But the menu is sure to warm even the coldest fingers and toes!

Weekly Menu 9/9–9/13

I feel like Fall is in full swing.  Football is on, evenings are cool(er), and leaves are beginning to change.  I am pulling out the fall decorations and giving the house a little lift.  I want my menu to reflect that, too. 

Monday – Pasta Primavera – this version is full of squash – zucchini, yellow and butternut all make an appearance.

Tuesday – Beef Stroganoff

Wednesday – Brown Sugar Chicken with Apples in the Crock Pot – chicken thighs with a brown sugar and Dijon mustard rub slow cooked with apples in apple juice.

Thursday – Cheese Ravioli in Sage Butter – so easy it hurts.  Make Buitoni cheese raviolis according to the package.  Melt butter in a pan then add 10 fresh sage leaves that have been chopped.  Pour the butter over the cooked ravioli and sprinkle with parmesan.

Friday – It’s another baseball day so there will be dinner on the go.  Probably sandwiches. 

Weekly Menu 9/2–9/6

Happy Labor Day everyone!  I hope you all are relaxing and soaking up the last days of summer!  I know I am.  It’s been a blitz of boating, “pooling”, and grilling.  I love this time of year – the corn is a little sweeter, the tomatoes a little juicier – all because I know its almost over.  So here’s to the end of summer!  Enjoy the menu!

Monday:  Farm Fresh Quinoa – this is my own recipe made with red and white quinoa, fresh corn, tomatoes, onion, zucchini and parsley all in a creamy sauce.

Tuesday:  Tomato Pie – Never made this before but it looks delish so I’m giving it a try!

Wednesday: Roasted Chicken and Red Pepper Quesadillas

Thursday: Steak and Blue Cheese Salad – super easy!  Just using a frisee mix, caramelized shallots, blue cheese and tomatoes you have a fabulous salad.  When you top it with steak, it’s dinner!

Friday: Seafood Linguine – a mix of shrimp, crab meat and scallops in a creamy sauce.  It’s my dad’s recipe and one of my favorites!

Today is the most gorgeous Carolina day!  Clear blue sky, perfect temperature, no humidity!  I am so content.  I’m cooking up some of my favorites to celebrate the weather.

Weekly Menu 8/19–8/23

It’s the first day of school!  My house is quiet (and messy)!  I’ll be able to get a few things done!  Yippee!  But I’m also a bit sad – my youngest started Kindergarten today.  She’s so grown up!  And my other one barely said goodbye this morning.  He just jumped out of the car and headed to class.  They don’t seem to need me as much anymore.  Boo hoo!  So I always remind them that if I wasn’t around there just wouldn’t be any good food to eat!  And the house would be a mess.  And there wouldn’t be fantastic decorating.  And no clean clothes.  Or shopping.  I could go on.  But they seem to get the point…. sometimes.

This week is meant for yummy suppers with a hint of fall comfort.  I loooove fall and nothing signals fall like the first day of school!

Weekly Menu 7/29–8/2

I am still being sneaky with my kiddos this week.  Yummy foods but healthier and good for the whole family, not just the children.  We are broadening our horizons and trying new things!  Good bye, chicken nuggets!  Good bye, hotdogs for dinner!  I’m one happy momma!

Monday – Chicken Caesar Sandwiches – Ciabbata bread spread with Caesar dressing and topped with roasted chicken and lettuce. 

Tuesday – Herbed Honey Chicken with garlicky green beans – a twist on this recipe. 

Wednesday – Grilled Cheese with Spinach – I watched Giada make this one and thought that it was brilliant!!  I will serve it with gazpacho.

Thursday – Slow Cooker Beef and Mashed Potatoes – while in Williams-Sonoma yesterday I saw their new braising sauces and had to pick one up.  I grabbed the caramelized onion and balsamic sauce.  Yum!!
