Weekly Menu 12/9–12/13

It’s that time of year…. time to cook like crazy.  The weather is chilly, the house is decorated, people are coming and going.  The best thing to do is put your kitchen to work with some meals to cozy up to.

Monday – Boursin Mac and Cheese with Chopped Kale (I’m making this one up as I go.  I’ll post the recipe if it comes out OK.)

I hope everyone had a wonderful Thanksgiving!  Time to gear up for Christmas!  Here is a hearty and satisfying menu for a week full of decorating and shopping!

Monday – Grilled Cheese and Tomato Basil Soup

Wednesday – Parmesan Honey Roast Pork in the Crock Pot with smashed garlic potatoes.  This looks so good I can’t wait to try it!

Thursday – Taco nachos!  Made with taco meat, black beans, fresh salsa and lots of gooey cheese!!!  Add some guacamole and Greek yogurt on the side.

Friday – French Mussel Bisque with Crusty Bread – just watched this on Barefoot Contessa and I must try it!

Weekly Menu 4/8-4/12

Wow, it feels good to be back!  We are getting settled in at Chateau Charmant and it feels like home!!!  I am getting back in the kitchen and doing some real cooking.  I have all of my kitchen gadgets and utensils back.  It feels so wonderful!

 

Monday – Herb Crusted Sirloin with mashed potatoes and grilled asparagus

Tuesday – Italian Meatballs with Marinara Sauce

Wednesday – Tacos!  (It is the princess’s birthday and tacos are her favorite.)

Thursday – Breaded Pork Chops with Haricot Vert

Friday – Salmon Cakes

Weekly Menu 3/4-3/8

With the threat of snow in the forecast on Tuesday and Wednesday (Seriously?!  It’s North Carolina in March!), I decided to make some warm, savory stuff.  But later in the week it should be in the 60’s, so let the grilling begin!  (Again, North Carolina in March!)  Stay tuned for the the recipes showing up.  I need to take some photos of the food.  And I need some photography lessons so bear with me!

Monday – Penne with Avocado, Arugula and Spinach Pesto.  It’s very simple – 1/2 avocado, 1 handful each of spinach, basil and arugula, 1 clove garlic, 2 Tbsp. olive oil and 1/2 C. parmesan cheese.

Tuesday – New England Clam Chowder in bread bowls.

Wednesday – Crock Pot Beef Stew

Thursday – Spiced Rubbed Pork Tenderloin and Grilled Fennel – the recipe calls for roasting it all, I’m going to grill it.

Friday – Grilled Tuna with Black Beans and Mango Salsa
