Weekly Menu 12/9–12/13

It’s that time of year…. time to cook like crazy.  The weather is chilly, the house is decorated, people are coming and going.  The best thing to do is put your kitchen to work with some meals to cozy up to.

Monday – Boursin Mac and Cheese with Chopped Kale (I’m making this one up as I go.  I’ll post the recipe if it comes out OK.)

I hope everyone had a wonderful Thanksgiving!  Time to gear up for Christmas!  Here is a hearty and satisfying menu for a week full of decorating and shopping!

This week, I found lots of inspiration on Pinterest.  There are so many talented cooks out there and so many creative recipes.  Several inspired me and with some tweaks, I will be giving them a try this week.

Monday – Pumpkin Alfredo with Bacon (I don’t really like Mac n Cheese so I’m making an Alfredo sauce with pumpkin, but this photo inspired me.  I’ll post my recipe after it is family approved!)

Happy Veterans Day and thank you to all who have served!

It is cooling down in the Carolinas!  The high is 45 this week.  Eeeek!  But the menu is sure to warm even the coldest fingers and toes!

Weekly Menu 11/4–11/8

Happy November!  I am so excited this time of year.  I want to cook and nest and snuggle with my family.  I want to bust out the Christmas decorations already, but I won’t.  I’ll find other ways to decorate. 

After completing the 31 Days challenge, I am happy to get back to my normal routine.  But I loved every minute of my 31 days and feel so much better for doing it.

Many of the items on this weeks menu are from a cookbook my daughter brought home from her school book fair. It is the Disney Princess Cookbook and is also available through Amazon.  Hopefully this will inspire my little princess to eat more than just pizza and tacos.  And it will get her into the kitchen!  She loves to help me cook, but this time I can let her take the lead!

So, without further adieu, here it the weekly menu.

Tuesday – Ham and Cheese Biscuit Braids (pg. 37) with Carrots and Ranch

Day 21: Use What You’ve Got

This 31 day series on Getting It Together has really opened my eyes.  I can finally see what systems are working in my house (pantry organization, for example) and what isn’t working (keeping my desk clean).  What I have found is that I’m not using what I’ve got. 

For example, the family drop zone was not getting used.  I created it specifically to contain school and household related clutter.  No so much.  We weren’t using it like we should.  The mail was piling up in the baskets and the dry erase calendar was erased.

So I finally put it to use.

I have been wondering why, oh why, can’t I get everything done that I need to while the kids are at school.  And if I do, why is it undone by 3:45 pm.  Of course!  The little critters aren’t cleaning up after themselves!    I wasn’t using their chore charts.

Now I am.  They will need to be retrained on the whole chore thing, but eventually it will work! (fingers crossed!)

I still have lots of baskets lying around that could be used for other purposes.  I have bags that can go to Goodwill.  And I have closets that need organizing.  In 10 more days.  Do you think I can do it?

Wednesday – Parmesan Honey Roast Pork in the Crock Pot with smashed garlic potatoes.  This looks so good I can’t wait to try it!

Thursday – Taco nachos!  Made with taco meat, black beans, fresh salsa and lots of gooey cheese!!!  Add some guacamole and Greek yogurt on the side.

Friday – French Mussel Bisque with Crusty Bread – just watched this on Barefoot Contessa and I must try it!

As you are reading this I am on my way home from a wonderful visit with my family.  We all flew up to Maine to celebrate my mother’s birthday which is actually today!  Happy Birthday, Mom!

 

Monday – Pizza!  We will go out for this.  I haven’t been home to do any shopping so the fridge is bare!
