Happy Veterans Day and thank you to all who have served!

It is cooling down in the Carolinas!  The high is 45 this week.  Eeeek!  But the menu is sure to warm even the coldest fingers and toes!

Monday – Broccoli and Bacon Quiche (recipe coming soon!)

Monday – Creamy Mushroom and Fontina Pasta – this looks fantastic!

Tuesday – Cali Turkey Burgers – regular turkey burgers with creamy avocado and bacon wrapped in lettuce.

Wednesday – Parmesan Honey Roast Pork in the Crock Pot with smashed garlic potatoes.  This looks so good I can’t wait to try it!

Thursday – Taco nachos!  Made with taco meat, black beans, fresh salsa and lots of gooey cheese!!!  Add some guacamole and Greek yogurt on the side.

Friday – French Mussel Bisque with Crusty Bread – just watched this on Barefoot Contessa and I must try it!

Weekly Menu 9/9–9/13

I feel like Fall is in full swing.  Football is on, evenings are cool(er), and leaves are beginning to change.  I am pulling out the fall decorations and giving the house a little lift.  I want my menu to reflect that, too. 

Monday – Pasta Primavera – this version is full of squash – zucchini, yellow and butternut all make an appearance.

Tuesday – Beef Stroganoff

Wednesday – Brown Sugar Chicken with Apples in the Crock Pot – chicken thighs with a brown sugar and Dijon mustard rub slow cooked with apples in apple juice.

Thursday – Cheese Ravioli in Sage Butter – so easy it hurts.  Make Buitoni cheese raviolis according to the package.  Melt butter in a pan then add 10 fresh sage leaves that have been chopped.  Pour the butter over the cooked ravioli and sprinkle with parmesan.

Friday – It’s another baseball day so there will be dinner on the go.  Probably sandwiches. 

Weekly Menu 8/12–8/16

I can’t believe that it is the last week of summer!  Where did the time go?  We have had a fantastic summer, but I think it is time to go back to school.  I crave the structure and the schedule that goes along with school.  I think, secretly, my kids do too.

Monday – 3 Bean Enchiladas – we are sticking with Meatless Mondays!

Tuesday – Spaghetti Carbonara – this is one of my favorites!!

 

Wednesday – Shrimp Stir Fry

Thursday – Burgers and Grilled Corn on the Cob

Friday – this weekend is going to be spent getting ready for school so it’s a chefs choice day.  Whatever I have in the fridge is what is for dinner.

July is in full swing.  I just wish we would get less rain so there could be more grilling!  All of this weeks meals are grill free, except for Thursday.  Stay dry and enjoy!

I hope everyone had a wonderful fourth of July.  We did!  It was fantastic celebrating in Maine with my family, especially cousins I haven’t seen in almost a decade.  Now it’s back to the summer in North Carolina – swimming, boating and relaxing with the kiddos.

Monday – Cheese Tortellini in Cream Sauce with Kale Salad

Tuesday – Pretzel Crusted Chicken with Green Beans

Wednesday – Taco Salad

Thursday – Pasta with Summer Vegetables (corn, onion, yellow squash, tomato and zucchini)

Weekly Menu 7/1–7/5

This week I am actually in Maine again visiting my family.  So, instead of doing my regular menu, I thought I would share with you some of my very favorite recipes from home.  My dad is the best cook around and an amazing outdoorsman so there is plenty of wild game.  And being in New England, lobster, of course!

Teriyaki Venison Loin with Sautéed Wild Mushrooms – this one’s a family recipe that I’ve never written down.  I’ll get my dad to write it down and then I’ll share it with you.

I can’t believe it is the end of June!!!  My how time flies!  I am really enjoying the fabulous flavors of summer and all of the good grilling weather.  I hope you are too!

Monday – Shrimp and Chorizo Spicy Fettuccini – loosely based on this recipe.  I will be using less chorizo and adding a little parmesan and pasta water to make it saucier.

It is time to get back into a bathing suit.  Ugh!  So for the next few weeks it will be low carb.  I will be gone on Monday so the kiddos are carbing it up!  After that, not so much.
