I hope everyone had a wonderful Thanksgiving!  Time to gear up for Christmas!  Here is a hearty and satisfying menu for a week full of decorating and shopping!

Weekly Menu 11/4–11/8

Happy November!  I am so excited this time of year.  I want to cook and nest and snuggle with my family.  I want to bust out the Christmas decorations already, but I won’t.  I’ll find other ways to decorate. 

After completing the 31 Days challenge, I am happy to get back to my normal routine.  But I loved every minute of my 31 days and feel so much better for doing it.

Many of the items on this weeks menu are from a cookbook my daughter brought home from her school book fair. It is the Disney Princess Cookbook and is also available through Amazon.  Hopefully this will inspire my little princess to eat more than just pizza and tacos.  And it will get her into the kitchen!  She loves to help me cook, but this time I can let her take the lead!

Day 19: Eating Healthy

I am not a high energy person.  I require at least 8 hours of sleep (Prince Charming will tell you I need 9 or 10) in order to be a pleasant person.  I am not a morning person.  I LOOOOOVE coffee.  Don’t speak to me before I’ve had a cup of coffee!

If, for some reason I stay up too late (the Boston Red Sox have a late game), I spend the next day eating lots of sugar and drinking coffee just to be productive.  I know this is all wrong!  I do want to change it. 

We have some very unhealthy eating habits around here.  We like junk food in this house.  We don’t eat enough fruits and vegetables.  I would like to change it.  So I’m putting it out there for everyone in blogland to see. 

We will get it together by eating healthier, as a family!

Our biggest flaw is our snack items.  My kids go straight for the chips and the crackers.  Not fruit or yogurt.  This hit me a few nights ago when I was reading to my kiddos at bedtime.  The princess had gotten a new book I Believe in Genevieve by Jenny Craig.  Yes, that Jenny Craig.  It’s a story about Jenny and her slow sluggish horse.  Through hard work, exercise and eating well, both Jenny and her horse perform better.  Yes, I thought.  That is true.

Now, I know its going to take some effort.  I’ll have to cut up fruit and veggies in advance so they are easy to access after school.  I will have to not buy the Cape Cod potato chips that I love.  I will have to drink more water and less coffee. (Caffeine headache, anyone?)  But I will do it, because it is good for my family.  So here are some healthy afterschool snack ideas that I have found.

Rainbow Fruit Skewers

Vegetable Crudité with Hummus

Super Smoothie (frozen tropical fruit blend, spinach and water)

Lactose free cheese and crackers (Cabot cheese is lactose free!)

Plain Popcorn sprinkled with a little butter and sea salt

Yogurt covered raisins

I think that I need to go to Trader Joe’s.  I have heard that they have amazingly healthy snack items.  We don’t live near one, so you have to plan to go there.  I will put it on my calendar. 

Then I’ll need to reorganize the pantry!

Weekly Menu 8/12–8/16

I can’t believe that it is the last week of summer!  Where did the time go?  We have had a fantastic summer, but I think it is time to go back to school.  I crave the structure and the schedule that goes along with school.  I think, secretly, my kids do too.

Monday – 3 Bean Enchiladas – we are sticking with Meatless Mondays!

Tuesday – Spaghetti Carbonara – this is one of my favorites!!

 

Wednesday – Shrimp Stir Fry

Thursday – Burgers and Grilled Corn on the Cob

Friday – this weekend is going to be spent getting ready for school so it’s a chefs choice day.  Whatever I have in the fridge is what is for dinner. 

Weekly Menu 8/5–8/9

I have decided that my family needs more vegetables.  This is not a new realization, its just the first time I’m going to do something about it.  I am prepared for the meltdowns at the dinner table and the whining about how disgusting green foods are.  But I will be strong!

Monday – Meatless Monday with Vegetable Lasagne – layers of veggies create the noodles and lots of gooey cheese!

Tuesday – Broiled Fish with Asparagus and Hollandaise Sauce – I had dinner at a fancy pants restaurant on Friday and got something similar.  This will be my attempt to recreate it.  The kids will have homemade fish sticks.

Wednesday – Italian Pasta Salad with Sopressata

Thursday – Pretzel Crusted Chicken with Apple Spinach Salad

Friday – My son has a book club meeting so we will all go out to dinner after.  My guess I pizza.  Ugh!  I swear that I need a pizza oven in my kitchen!!

Weekly Menu 7/29–8/2

I am still being sneaky with my kiddos this week.  Yummy foods but healthier and good for the whole family, not just the children.  We are broadening our horizons and trying new things!  Good bye, chicken nuggets!  Good bye, hotdogs for dinner!  I’m one happy momma!

Monday – Chicken Caesar Sandwiches – Ciabbata bread spread with Caesar dressing and topped with roasted chicken and lettuce. 

Tuesday – Herbed Honey Chicken with garlicky green beans – a twist on this recipe. 

Wednesday – Grilled Cheese with Spinach – I watched Giada make this one and thought that it was brilliant!!  I will serve it with gazpacho.

Thursday – Slow Cooker Beef and Mashed Potatoes – while in Williams-Sonoma yesterday I saw their new braising sauces and had to pick one up.  I grabbed the caramelized onion and balsamic sauce.  Yum!!

Weekly Menu 7/22–7/26

It is the last full week of July.  Time flies while you are having fun!  And the kiddos and I are on a quest to broaden their palate, so to speak.  Well, its really my quest, but they are the target.  So, these are all pretty kid friendly.  I’m hoping they actually eat this week and don’t starve themselves!  I have some pretty picky eaters.

Monday – Tuna Noodle Casserole – based on the Campbell’s version, but healthier and made creamy with Greek yogurt and “healthified” with cauliflower puree instead of so much condensed soup.

Tuesday – Chicken Fajitas – since we love tacos so much I thought I’d try this!

Wednesday – Pasta Bolognese – This one is a favorite so I know they’ll eat at least once!

Friday – Black and Bleu Steak Salad – Steak atop a bed of arugula sprinkled with blue cheese, chopped tomato, and crispy shallots.

Monday – Turkey Apple Meatballs over egg noodles – yummy and sweet!  Perfect for the kiddos!

Tuesday – Roasted Chicken Wings – a healthier version of the bar food.

Wednesday – Healthy Mac and Cheese (add pureed cauliflower!) – saw this one on Food Network’s “Not My Mama’s Meals” and I will try to recreate it.

Thursday – Beef and Blue Cheese Salad – quick and light because Thursdays are baseball nights!

Friday – Beer Battered Fish n Chips

Weekly Menu 3/4-3/8

With the threat of snow in the forecast on Tuesday and Wednesday (Seriously?!  It’s North Carolina in March!), I decided to make some warm, savory stuff.  But later in the week it should be in the 60’s, so let the grilling begin!  (Again, North Carolina in March!)  Stay tuned for the the recipes showing up.  I need to take some photos of the food.  And I need some photography lessons so bear with me!

Monday – Penne with Avocado, Arugula and Spinach Pesto.  It’s very simple – 1/2 avocado, 1 handful each of spinach, basil and arugula, 1 clove garlic, 2 Tbsp. olive oil and 1/2 C. parmesan cheese.

Tuesday – New England Clam Chowder in bread bowls.

Wednesday – Crock Pot Beef Stew

Thursday – Spiced Rubbed Pork Tenderloin and Grilled Fennel – the recipe calls for roasting it all, I’m going to grill it.

Friday – Grilled Tuna with Black Beans and Mango Salsa
